Sheryl Shard's Quick Guacamole

This month's recipe is contributed by Sheryl Shard, co-author of the book,
Sail Away! A Guide to Outfitting and Provisioning for Cruising, who cruises with her husband, Paul, aboard their Classic 37 sailboat, Two-Step.

One of the things Paul and I love about the cruising life is that we meet so many wonderful people - and have the time to entertain and get to know them! This Guacamole dip, which I learned from my sister-in-law, Cristina Gallo, one winter when she and my brother, Kevin, came to visit us in the Bahamas, is always popular when I serve it up for Happy Hour. The great thing is that's it's so easy to prepare!


Sheryl Shard's Quick Guacamole

2 ripe avocados, peeled, pitted and mashed
2-3 Tablespoons salsa
1-2 Tablespoons of lemon or lime juice

Mix all ingredients together adjusting amount of salsa and lemon/lime juice to taste. Chill before serving if you wish. Serve with nachos or use as a dip for celery sticks and other veggies.

Galley Tip - Serving Later

If, after preparing the Guacamole, you aren't planning to serve it right away, save one of the avocado pits and place it in the bowl with the guacamole. It will prevent it from darkening. Remove before serving.
